Roughly chop the remaining mushrooms and onion and add them to the beef mixture. Roll out the remaining puff pastry dough on a lightly floured surface, laying it over the filling, pressing the edges of the pastry together. Cut away the extra pastry from the sides and roll the top and bottom edges together, sealing the pasty together.
For a final touch, lightly brush the top of the pastry with an egg wash, this will give it a nice golden brown colour after baking. Bake your Beef Wellington dish in the oven for 30-35 minutes or until the pastry is dark golden brown and flaky. Let your Wellington cool for about 5 minutes before serving.
