- 1 lb. boneless, skinless chicken breasts, diced into 1” cubes
- 2 tablespoons chipotle chili powder
- 1 tablespoon garlic powder
- 2 tablespoons extra virgin olive oil
- 1/4 cup heavy cream
- 4 tablespoons butter
- 1/4 cup chicken broth
- Salt, to taste
- 1 large onion, diced
- 1 bell pepper, diced
- 1/2 cup diced tomatoes
- 1/4 cup freshly grated Parmesan cheese
- 1 lb. spaghetti pasta
Instructions
- In a medium bowl, mix the chicken, chipotle chili powder and garlic powder. Set aside.
- In a large skillet over medium heat, add the olive oil and butter. Once the butter is melted, add the chicken and cook until golden, about 5 minutes.
- Add the cream and chicken broth, and let the mixture cook until it reduces and thickens, about 5 minutes. Add salt, to taste.
- Add the onion, bell pepper and tomatoes to the skillet and cook for an additional 5 minutes, or until the vegetables are tender.
- Meanwhile, cook the spaghetti according to package instructions and drain.
- Add the cheese and the cooked spaghetti to the skillet. Stir until everything is well combined, about 2 minutes. Serve warm.
