- 2 tablespoons of extra-virgin olive oil
- 1 pound of chicken breasts, diced into cubes
- 1 onion, chopped
- 3 strips of bacon, cut into strips
- 4 cloves of garlic, minced
- 1 can (10 ounces) of diced tomatoes
- 1 teaspoon of Italian seasoning
- 1 teaspoon of salt
- 1/4 teaspoon of ground black pepper
- 1 can (8 ounces) of tomato sauce
- 2 cups of fresh spinach leaves
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 2-3 minutes, stirring occasionally. Add the onion and bacon and cook for an additional 4-5 minutes, stirring occasionally. Add the garlic, diced tomatoes, Italian seasoning, salt, and pepper and stir together. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until the chicken is cooked through.
2. Add the tomato sauce and simmer for an additional 5 minutes. Add the spinach and cook for an additional 1 minute. Serve with mashed potatoes or steamed vegetables.
