- 1 tbsp. olive oil
- 1 lb. boneless, skinless chicken breasts, cut into cubes
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 1/2 cups salsa (store-bought or homemade)
- 1 cup chicken broth
- 1 (14.5 oz) can black beans, rinsed and drained
- 1 (4.5 oz) can green chilies, drained
- 1 tsp. ground cumin
- 1/2 tsp. chili powder
- 1/4 tsp. salt
- 8 to 12 (6-inch) flour tortillas
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 375°F.
- Heat oil in a large skillet over medium-high heat. Add chicken and cook until starting to brown, about 5 minutes. Add onion and bell pepper to the skillet and cook until softened, about 3 minutes.
- Add garlic and cook until fragrant, about 30 seconds. Add salsa, broth, beans, chilies, cumin, chili powder and salt to the skillet. Cook until the sauce has thickened, about 5 minutes.
- Spray a 9×13-inch baking dish with nonstick cooking spray. Place a tortilla in the bottom of the dish. Top with a generous spoonful of the chicken mixture. Sprinkle with cheese.
- Continue layering the tortillas, chicken mixture and cheese until all the ingredients are used, ending with the cheese. Cover with aluminum foil.
- Bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is golden and bubbly.
- Let the enchiladas cool for a few minutes before serving.
