Ingredients

  • Two tablespoons of butter
  • 2 ½ pounds of chicken thighs
  • 2 cups of cooked rice
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 1 can of cream of mushroom soup
  • 1 can of Rotel tomatoes
  • 4 oz. of green chilies
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

Steps

  1. Preheat your oven to 350 degrees.
  2. Melt the butter in a large skillet over medium-high heat.
  3. Add the chicken thighs to the skillet and cook until they are lightly browned.
  4. Once the chicken is finished cooking, remove it from the skillet and place it on a plate.
  5. Add the onion to the skillet and cook until it is softened. (About 5 minutes)
  6. Stir in the cream of mushroom soup, Rotel tomatoes, green chiles, garlic powder and cooked rice.
  7. Place the cooked chicken in an oven-safe baking dish and pour the mixture from the skillet over the chicken.
  8. Cover the dish with foil and bake it for 25-30 minutes.
  9. Serve with salt and pepper to taste.

Chicken Olé Recipe #2

Ingredients

  • 1 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 cup of white rice, uncooked
  • 1 small onion, chopped
  • 1 can of Rotel diced tomatoes and chiles
  • 1 ½ cups of chicken broth
  • 1 tsp of cumin
  • 3-4 chicken thighs, boneless, skinless
  • ¼ cup of sour cream
  • 2 tbsp of cilantro, chopped

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and onion to the skillet and cook for 3-4 minutes until softened.
  3. Stir in the uncooked rice, Rotel tomatoes and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  4. Sprinkle the cumin over the rice mixture and mix in well.
  5. Add the chicken thighs to the skillet, cover and continue cooking for an additional 15 minutes, or until the chicken is cooked through.
  6. Remove the skillet from the heat and stir in the sour cream and cilantro.
  7. Serve warm.
