Ingredients:
– 2 cooked chicken breasts, shredded
– 1/4 cup slivered almonds
– 1/4 cup mayonnaise
– 2 tsp minced garlic
– 1 tsp thyme leaves
– 1/2 cup shredded cheddar cheese
– 2 cups mixed lettuce and spinach
– 4 slices wheat bread end
Instructions:
1. Begin by shredding the cooked chicken breasts into small pieces. Place the shredded chicken into a medium bowl and add the slivered almonds and mix until combined.
2. In a separate small bowl, stir together the mayonnaise, garlic and thyme leaves until combined. Pour the garlic thyme dressing over the chicken and almonds and mix until everything is evenly coated.
3. Spread the chicken salad evenly between the four pieces of bread. Sprinkle a generous helping of the shredded cheese on top of each sandwich. Top with the mixed lettuce and spinach.
4. Place the sandwiches on a preheated grill and press until lightly golden and the cheese has melted. Serve warm and enjoy!
