Preparing the Batter
In a large mixing bowl, combine the flour, salt, pepper, paprika, garlic powder, mustard powder and baking powder. Then, slowly add the water and mix until a thick, smooth batter forms (it should be the consistency of a thick pancake batter). Set aside.
Frying the Chicken
In a large pot or pan, heat the canola oil to 375 degrees Fahrenheit (190 degrees Celsius). Once the oil is at the correct temperature, dip each piece of chicken in the batter, and then carefully and quickly lower into the hot oil. Fry for about 10 minutes, flipping the pieces over halfway through, until golden and crispy.
Letting the Chicken Cool
Once the chicken is finished cooking, carefully remove the pieces from the oil and let them sit on a plate lined with paper towels. The paper towels will absorb any excess oil and help keep the chicken crisp.
Serving the Fried Chicken
