- 1/2 cup of canned greenchiles, diced

- 1/2 teaspoon of salt
- 1/2 cup of shortening
- 2 cups chicken broth
- 30-35 corn husks
Instructions
1. The first step is to prepare the filling. In a bowl, combine the cheese, the diced greenchiles, and the corn. Mix the ingredients together and set aside.
2. Sift together the masa harina, baking powder, and salt. Cut in the shortening with a pastry blender, or use two forks to break it up as finely as possible. This will make it easier to work with.
3. Gradually add in the chicken broth and continue to mix until it forms a soft dough. Test the dough by then rolling a small piece between your hands and if it forms into a ball, you know it’s the right consistency.
4. Rinse the husks with warm water and pat them dry with a paper towel. Take a heaping tablespoon of the masa dough and spread it onto the husk. Spread it out to about 3 inches wide and make sure it’s spread evenly and won’t break apart when you fold it.
5. Place a spoonful of the filling onto the masa. Roll up the husk and fold the ends together so that it looks like a mini burrito.
6. Place the tamales in a steamer and steam them for approximately an hour. You can check to make sure they’re done by piercing one with a toothpick and seeing if it comes out clean.
Once they are done, you can serve them with salsa, guacamole, or sour cream! Enjoy!
