Ingredients
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup canola oil
- 1 cup sugar
- 1 large egg
- 3/4 cup espresso or strong brewed coffee – cooled
- 2 tablespoons brandy
- 1 cup pitted prunes, chopped
Instructions
- Preheat your oven to 325°F (165˚C) and Grease and flour an 8″ squared pan.
- In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, mix together oil and sugar until combined. Beat in egg until mixture is light and fluffy. Beat in espresso and brandy.
- Fold in dry ingredients, alternating with chopped prunes, until completely blended.
- Pour batter into the prepared pan and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for about 15 minutes before cutting into slices and serving.

- 750g cooked chicken, shredded
- 1 head of Romaine lettuce, shredded
- 250g feta cheese, crumbled
- 1 red pepper, sliced
- 3 spring onions, chopped
- 2 carrots, grated
- 1 tablespoon olive oil
- 1 tablespoon Balsamic vinegar
- 30g toasted pine nuts
Instructions
- In a large bowl, combine the shredded chicken, Romaine lettuce, feta, pepper, spring onions and carrots.
- In a small bowl, mix together the olive oil and Balsamic vinegar. Pour the dressing over the salad and mix together.
- Transfer the salad to a serving plate, sprinkle with toasted pine nuts, and serve either warm or cold.
