Asian-Inspired Chicken Satay Skewers

Fresh and savory chicken satay skewers served with a creamy peanut sauce will tantalize you with the boldness of its flavor.
Ingredients
For the marinade:
- 1/4 cup of reduced sodium soy sauce
- 2 tablespoons of honey
- 2 tablespoons of sesame oil
- 2 tablespoons of peanut butter or powdered peanut butter
- 2 tablespoons of freshly grated ginger
- 4 cloves of chopped garlic
For the skewers:
- 1 1/2 pounds of boneless, skinless chicken thighs
- 1 red bell pepper
- 1 green bell pepper
- 1/2 cup of sliced shallots
For the sauce:
- 1/4 cup of creamy peanut butter
- 2 tablespoons of rice vinegar
- 1 tablespoon of reduced sodium soy sauce
- 1 tablespoon of honey
- 1 tablespoon of freshly grated ginger
- 2 cloves of minced garlic
- 2 tablespoons of freshly squeezed lime juice
- 1 teaspoon of toasted sesame oil
- 2 tablespoons of warm water
Instructions
1. For the marinade, combine all ingredients in a large bowl and mix until blended.
2. Cut the chicken into 1” cubes and add to the marinade. Cover and refrigerate for at least 1 hour up to overnight.
3. Preheat a grill or grill pan over medium-high heat.
4. Cut the bell peppers into 1” cubes.
5. Thread the chicken, bell peppers and shallots onto skewers and grill for about 10 minutes, turning the skewers every 2 minutes until the chicken is cooked through and the veggies are lightly charred.
6. For the sauce, combine all ingredients in a small bowl and whisk until fully blended.
7. Serve the satay hot or cold with the creamy peanut sauce on the side.
