Low-Carb Chicken Meal Prep Bowls
Meal prepping is a great way to make sure your eat healthy and save time. With these low-carb chicken meal prep bowls, you can have a balanced meal in less than 30 minutes!
What You Need
This meal prep is comprised of mostly lower-carb ingredients, so you don’t need too much. To make 2 servings of this meal, you will need:
- 2 chicken breasts, or 1.5lb of pre-seasoned chicken
- 1/2 cup of white rice
- 1 cup of green beans
- 1 bell pepper, diced
- 1/4 teaspoon of chili powder
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of oregano
- 2 tablespoons of olive oil
Instructions
Preheat the oven to 400 degrees F (200 degrees C). In a bowl, mix together the chili powder, garlic powder, oregano, and olive oil. Add the chicken and bell pepper and mix everything together. Place the chicken and pepper mixture on one side of a baking sheet. On the other side of the baking sheet, place the green beans. Bake for 20 minutes or until cooked through. Meanwhile, cook the rice according to the instructions on the package. Once the chicken and vegetables have finished cooking, divide the chicken and vegetables into two meal prep bowls, and top each bowl with half of the cooked rice. Enjoy!
