1. 1tsp olive oil
2. 2 cloves garlic, minced
3. 1-3/4 cup Israeli couscous, toasted
4. 1/2 cup carrots, diced
5. 2 cups chicken broth
6. 1/2 cup white wine
7. 2 bay leaves
8. 1/2 cup milk
9. 1/2 cup heavy cream
10. 1/4 cup parsley, chopped
11. 2 cups cooked chicken, diced
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the garlic and cook until fragrant, about 1 minute.
2. Add the couscous, carrots, chicken broth, wine and bay leaves to the pot. Bring to a boil, then cover and reduce heat to low. Simmer for 15 minutes, stirring occasionally.
3. After 15 minutes, remove bay leaves. Add the milk, cream, parsley and chicken to the pot. Simmer for another 5-10 minutes, stirring occasionally.
4. Serve the soup hot. Enjoy!
