Ingredients
2 cups cooked and shredded chicken, 2 green onions chopped, 1/2 cup diced red and yellow peppers, 1/2 cup corn, 1 teaspoon olive oil, 1/4 cup BBQ sauce (preferably honey or brown sugar flavored), 2 tablespoons light mayonnaise, 2 tablespoons sour cream, 1 tablespoon tarragon, choice of greens, and choice of croutons. Optionally, you may add 1 tablespoon of honey, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of pepper.
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook, stirring occasionally, for about 3 minutes or until heated throughout. Set aside.
2. In a large bowl, combine the mayonnaise, sour cream, BBQ sauce, honey (if desired), tarragon, garlic powder, pepper, and a pinch of salt. Whisk ingredients together until well blended.
3. Add chicken, peppers, corn, and green onions to the bowl with the dressing. Toss until the chicken is coated in the dressing. You can enjoy it right away or chill in the refrigerator for an hour.
4. To assemble the salad, layer greens on the bottom of the bowl, top with the chicken and dressing, and sprinkle with croutons. Enjoy as-is or with bread.
