Ingredients
Here’s what you’ll need to make the savory Pesto Chicken Quinoa Bowl:
- 2 boneless and skinless chicken breasts
- 1 cup of quinoa
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 cup of pesto
- 2 tablespoons of olive oil
Instructions
1. Preheat the oven to 375F.
In a large bowl, toss the chicken breasts, quinoa, zucchini, bell pepper and pesto with the olive oil. Use enough olive oil to just barely coat the ingredients.
2. Bake in the preheated oven.
Spread the ingredients evenly on a baking tray and bake in preheated oven for 30 minutes.
3. Serve.
Divide the quinoa bowl into bowls and serve warm. Enjoy!
