-8 thin sheets of phyllo pastry
-2 tablespoons melted butter

Instructions

1. Preheat oven to 375°F (190°C) and line a large baking tray with parchment paper.
2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 3-4 minutes each side, or until lightly golden brown and cooked through.
3. Transfer chicken breasts to a plate, cover with aluminum foil and set aside.
4. In the same skillet, sauté garlic and thyme for 1 minute. Add lemon zest and Parmesan cheese, stirring until cheese is melted.
5. Cut chicken into 1/2-inch (1 cm) cubes and add to skillet. Season with salt and pepper, and cook for 2-3 minutes, or until chicken is heated through.
6. Arrange a single sheet of phyllo onto the prepared baking tray. Brush with melted butter and top with another sheet of phyllo. Repeat with remaining phyllo sheets and butter.
7. Spoon chicken onto the center of the phyllo pastry and wrap into a parcel. Pinch together edges to seal.
8. Brush with melted butter, scatter with chopped parsley and bake in preheated oven for 15-20 minutes, or until pastry is crisp and golden.
9. Remove from oven and allow to cool for 5 minutes before serving.
