Ingredients
For the accompanying potatoes, mix together:
- 3-4 diced potatoes
- 3 cloves of minced garlic
- 1.4 cup of vegetable oil
- Salt and pepper to taste
For the herb sauce, mix together:
- 1/4 cup of olive oil
- 3 cloves of minced garlic
- 2 tablespoons of fresh parsley
- 1 tablespoon of fresh basil
- 1/2 teaspoon of fresh oregano
- Salt and pepper to taste
Steps
- Preheat the oven to 350°
- In a large skillet, heat the vegetable oil over medium heat
- Add the diced potatoes to the skillet and cook for 10-15 minutes, stirring occasionally, until golden and crispy. Remove from the skillet and set aside
- In the same skillet, reduce the heat to low, and add the olive oil and garlic
- Add the parsley, basil, oregano and salt and pepper to the skillet and cook for approximately 4 minutes. Remove from the heat

- Bake the fish for 10 minutes, until just cooked through
- In a separate skillet, over medium-high heat, add the remaining olive oil and garlic and cook for 1 minute
- Add the cooked potatoes to the skillet and cook for 1-2 minutes, until golden and crisp
- Serve the fish with the potatoes and herb sauce
